This Shrimp Green Curry is coconut-free. If you're someone who loves bold flavors but isn't quite sold on the coconut craze, then this one's for you!

Let's talk about the ingredients you'll need:

  • 4 pounds of shrimp (defrosted and chilled)
  • 2 tablespoons of your preferred cooking oil (we'll split this later)
  • 1 onion, diced and halved
  • About 6 cloves of garlic, finely minced
  • Zest of one lime (zest it up, baby!)
  • 4 ounces of green curry paste (the star of the show)
  • 1 can of water chestnuts (for that satisfying crunch)
  • 1 pound of sliced bell peppers (mini ones work wonders)
  • 1 head of cauliflower, sliced (because we love color and substance)
  • 16 ounces of chicken broth (for that extra depth)
  • Half a gallon of 2% milk (yes, you read that right!)
  • A bunch of fresh cilantro (for that herbaceous kick)
  • 1.5 pounds of baby potatoes (because who can resist?)
  • 2 cups of spinach (for that healthy green goodness)
  • And of course, serve it up with some rice!

Serve it up with some fluffy rice and sprinkle on some fresh cilantro for that finishing touch. Feel free to get creative with your ingredients - swap out veggies, try different proteins like chicken or beef, or amp up the heat with some extra curry paste or jalapenos. The world is your oyster (or should I say shrimp?).

So, what are you waiting for? Get your apron on, gather up those ingredients, and let's whip up some magic in the kitchen together.

Without further ado, here is the recipe!
